I bake the bread myself because I do not eat bread with active dry yeast.
My recipe :
20 gram fresh yeast (NO active dry yeast)
1 teaspoon sugar
1 teaspoon salt
1 cup warm milk (105-115 degrees)
4 cups bread flour
In a small saucepan, combine sugar, milk, salt. Heat over low flame to lukewarm. Activate the yeast- dissolve the yeast with warm milk in a warmed bowl. It is important to keep the milk at the correct temperature to activate the yeast. Add the lukewarm milk mixture and flour gradually, and knead until dough is smooth. Place in a greased bowl, turning the dough, so greased portion is on top. Cover and set aside to rise in a warm place for about an hour. Punch down the dough and divide in half. Shape each half into a loaf and place in greased 8½" x 4½" x 2½" loaf pan. Cover and set aside to rise in a warm place, for about an hour, until doubled. Bake at 400 degrees F for 30 minutes. Remove from pans and cool on wire racks.
